A Vegan Lunch

I recently had a request to feature some vegan recipes in my blog, so I decided to write about a really easy lunch that I make for myself sometimes. It's super easy to make, and easy to pack away if you want to bring it to school or work.

NOTE: Make sure you always get an adult's help when cooking, especially if you're using knives or heat!



Vegan Mushroom Rice

Ingredients:
- Rice
- Mushrooms
- Extras: seaweed salad or avocado!
- Oil for frying (I use rice bran oil)
- Soy sauce


Directions


1. Cook up some rice! Make up enough for a decent serving for each person you're cooking for. You can use microwave rice, cook up rice on the stove according to the instructions on the packet, or even use a rice cooker. Pop your rice in a bowl and set it aside!

2. Fry your mushrooms in a little oil and a few dashes of soy sauce over a medium heat. Use around four medium sized mushrooms for each person you're cooking for- remember, they shrink! When they have shrunk down and turned brown, pop them in your bowl with the rice.

3. Get out your avocado or seaweed salad (or both)! Cube your avocado and add it to your rice mix (you'll want a quarter to a half of an avocado per person, depending on the size of the avocado). For the seaweed salad, just grab a few spoonfuls per person and throw it in the rice dish too.

4. Mix up your rice and other ingredients.

5. Serve, and enjoy!
